This soup is perfect for those cozy nights at home. Even if it's cold outside, this soup is both warm and delicious.
In a Dutch oven, combine the first five ingredients. Bring to a boil. Reduce heat; cover and simmer until vegetables are tender, 8-10 minutes.
Stir in cheese, just until melted (do not boil).
Top with Abby J’s Smokin’ Hot Sauce and garnish with chives, croutons, and parsley.
